If you wax and store cheese properly it can last for years, some say 8-10. Plus, you have the added benefit of the sharpness increasing with age.
You want to use firm cheeses like Parmesan, cheddar, and Swiss. Start with a mild to medium cheese to account for the increased sharpness.

LMAO. Handling it with bare hands (pic) is a sure fire way to ensure it won’t keep.
never touch the cheese with your hand ! put gloves on or use toungs to handel heres a trick take and cut 1/4 inch strips of parcment paper that will wrap around the cheese then you have only got to pull the paper to open it .
Cheese wouldn’t last long enough in my house to be waxed let alone sit for 8-10 years.
