If you wax and store cheese properly it can last for years, some say 8-10. Plus, you have the added benefit of the sharpness increasing with age.
You want to use firm cheeses like Parmesan, cheddar, and Swiss. Start with a mild to medium cheese to account for the increased sharpness.

We vacuum seal ours before they go into the cheese cave. Had too many mold under the wax.
Cheese is horrible for the human body in the amount that the average and even non average person eats it. But i do love my chedder and string cheese.

Just buy unscented candles or paraffin wax ensure cheese is dry before u do it also dip 3-4 times u want at least 1/8 inch cover
